Creamed or Whipped honey also is called "spun" honey. Most of the rest of the world consumes their honey in this way because honey has a natural tendency to crystalize. Make no mistake this is not just honey that has crystalized, we control the natural process to ensure that the finished product is a smooth, fine spread that's been whipped to a spreadable texture. (We call it Tennessee Snow — it rarely snows in our neck of the woods, so we have to make our own!)
